The Charmat method, also known as the tank method, is a modern and efficient way to produce sparkling wine—especially Prosecco. It’s designed to preserve the wine’s fresh, fruity character while creating its signature bubbles.

Step-by-Step Breakdown of the Charmat Method

  1. First Fermentation
    The process begins with the creation of a still base wine. Glera grapes are harvested, pressed, and fermented in stainless steel tanks. This initial fermentation converts grape sugars into alcohol.
  2. Second Fermentation in Pressurized Tanks
    The base wine is transferred to a sealed, pressurized tank. Winemakers add sugar and yeast to trigger a second fermentation. As the yeast consumes the sugar, it produces alcohol and carbon dioxide.
  3. Bubble Formation
    Because the tank is sealed, the carbon dioxide cannot escape. It dissolves into the wine, forming the bubbles that make Prosecco sparkle. This stage usually lasts 30 to 45 days.
  4. Filtration and Bottling
    Once fermentation is complete, the wine is filtered to remove yeast and sediment. It is then bottled under pressure to preserve the bubbles.

Why the Charmat Method Works for Prosecco

This method is ideal for wines meant to be light, aromatic, and fresh. Unlike the traditional Champagne method, which involves bottle fermentation and aging, the Charmat method is quicker and less expensive. It allows Prosecco to retain its crisp apple, pear, and citrus notes without developing yeasty or nutty flavors.

The result is a sparkling wine that’s vibrant, youthful, and perfect for casual sipping or festive occasions.
