Chocolate Chip Hermit Cookies Recipe

Chocolate Chip Hermit Cookies are a cozy, old-fashioned treat that blends the warm spices of traditional hermit bars—like cinnamon, cloves, and nutmeg—with the sweet richness of chocolate chips. Typically made with molasses or dark brown sugar, these cookies have a soft, chewy texture and a deep, comforting flavor that evokes autumn afternoons and vintage kitchen aromas.

Ingredients

Chocolate Chip Hermit Cookies combine the best of both worlds—classic spice and modern sweetness. The chocolate adds richness while the spices keep the flavor grounded and cozy.

  • 2¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup unsalted butter (softened)
  • ¾ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup raisins or chopped dates
  • ½ cup chopped walnuts or pecans (optional)
  • Optional: ½ teaspoon espresso powder for depth

Instructions

Step 1: Preheat and Prepare
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it. This helps prevent sticking and ensures even baking.

Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, salt, and espresso powder if using. These spices create a warm base that complements the chocolate.

Step 3: Cream Butter and Sugars
In a large mixing bowl, beat the softened butter with both sugars until light and fluffy. This takes about 2–3 minutes. The mixture should be creamy and smooth.

Step 4: Add Eggs and Vanilla
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. The batter will become glossy and thick.

Step 5: Combine and Fold
Gradually add the dry ingredients to the wet mixture. Stir until just combined. Fold in the chocolate chips, raisins or dates, and nuts if using. The dough will be dense and speckled with mix-ins.

Step 6: Shape and Bake
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. You can shape them into small mounds or slightly flatten them. Bake for 10–12 minutes, or until the edges are golden and the centers are set.

Step 7: Cool and Store
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Once fully cooled, store in an airtight container. These cookies stay chewy and flavorful for several days.
