Ingredients

Instructions

Step 1: Preheat and Prepare
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it. This helps prevent sticking and promotes even browning.

Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt. These spices provide warmth and balance the sweetness of the tropical fruits.

Step 3: Cream Butter and Sugars
In a large mixing bowl, beat the softened butter with both sugars until light and fluffy. This takes about 2–3 minutes. The mixture should be creamy and pale.

Step 4: Add Eggs and Vanilla
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. The batter will become smooth and slightly glossy.

Step 5: Combine and Fold
Gradually add the dry ingredients to the wet mixture. Stir until just combined. Fold in the chopped dried pineapple, mango or papaya, shredded coconut, and nuts if using. The dough will be thick and colorful.

Step 6: Shape and Bake
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. You can shape them into small mounds or slightly flatten them for even baking. Bake for 10–12 minutes, or until the edges are golden and the centers are set.

Step 7: Cool and Store
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Once fully cooled, store in an airtight container. These cookies stay chewy and flavorful for several days.
